Ingredients

  • 2 cups unsweetened almond milk
  • ½ cup chia seeds
  • 1 tsp vanilla extract
  • 1 tbsp almond extract (optional)
  • 12 tbsp sweetener (honey, maple syrup, agave, or your choice)
  • Pinch of salt

Instructions

  1. In a mixing bowl or jar, whisk together almond milk, vanilla extract, almond extract (if using), sweetener, and a pinch of salt until well combined.
  2. Stir in the chia seeds and mix thoroughly so no clumps remain.
  3. Let the mixture sit for 5 minutes, then stir again to prevent settling.
  4. Cover and refrigerate overnight, or at least 4–6 hours, to allow the pudding to set.
  5. Before serving, stir again. If too thick, add a splash of almond milk to loosen.
  6. Serve chilled with optional toppings like fruit, nuts, or coconut.

Notes

  • Use any plant-based or dairy milk you prefer.
  • Adjust sweetness based on your taste and milk choice.
  • Mix in cocoa powder, fruit puree, or spices for variety.
  • Swirl in nut butter after setting for richness.
  • Best enjoyed cold; do not reheat.
  • Store in fridge for up to 4–5 days in sealed containers.
