Ingredients

  • For the French Toast:
  • 1 loaf brioche bread, sliced into 1-inch-thick slices
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted, plus additional butter for cooking
  • 3 tablespoons white sugar
  • 1/2 vanilla bean pod, split and seeds scraped
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • For the Blueberry Compote:
  • 1 1/2 cups fresh or frozen blueberries
  • 2 tablespoons white sugar
  • 1 tablespoon lemon juice

Instructions

  1. In a small saucepan, combine blueberries, sugar, and lemon juice. Cook over medium-high heat for 10 minutes, stirring occasionally, until thickened. Set aside to cool slightly.
  2. Slice brioche into 1-inch slices and place in a single layer on a baking sheet.
  3. In a bowl, whisk heavy cream, milk, eggs, melted butter, sugar, vanilla bean seeds, cinnamon, and salt until smooth.
  4. Brush custard over both sides of each slice of bread. Pour remaining custard over the bread and let absorb fully.
  5. Heat a buttered griddle or skillet over medium-high heat. Cook each slice for 3 minutes per side until golden brown.
  6. Serve warm with blueberry compote and additional toppings if desired.

  • Use slightly stale bread for best custard absorption and texture.
  • Vanilla extract (2 tsp) or paste can replace vanilla bean.
  • Challah can be used instead of brioche.
