Ingredients

  • 2 cups (480 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (100 g) granulated sugar
  • 4 large egg yolks
  • 3 tablespoons cornstarch
  • 1 tablespoon all-purpose flour
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons unsalted butter
  • 1 package (about 14 oz / 400 g) puff pastry sheets, thawed
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 400°F (200°C) and line two baking trays with parchment paper.
  2. Roll out puff pastry sheets on a floured surface and cut to fit a 9×9-inch (23×23 cm) baking pan. Prick with a fork and bake for 10–12 minutes until golden and crisp. Cool completely.
  3. In a saucepan, heat the milk and cream over medium heat until just beginning to simmer.
  4. In a separate bowl, whisk together sugar, egg yolks, cornstarch, and flour until smooth and pale.
  5. Slowly pour half the hot milk into the egg mixture, whisking constantly to temper the eggs.
  6. Return the mixture to the saucepan and cook over medium heat, whisking constantly until thickened and smooth, about 3–5 minutes.
  7. Remove from heat and stir in vanilla extract and butter until fully incorporated. Cover with plastic wrap directly on the surface and cool completely.
  8. Place one baked pastry sheet in the bottom of a 9×9-inch pan. Spread the cooled custard evenly over it. Top with the second pastry sheet, pressing gently to level.
  9. Refrigerate for at least 2 hours until fully set. Dust with powdered sugar, slice into squares, and serve chilled.
