Ingredients

  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • Pinch of nutmeg
  • 1/4 cup milk
  • 1 egg, beaten
  • 1 tablespoon butter, melted
  • 1/2 apple, finely chopped or grated
  • 1 tablespoon sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon milk or cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease 3–4 muffin tins.
  2. In a bowl, mix together flour, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine milk and beaten egg. Add to dry ingredients and stir until just combined.
  4. Stir in melted butter. Combine chopped apple with sugar and fold into the batter.
  5. Divide batter evenly into prepared muffin cups.
  6. Bake for 20 minutes or until tops are golden and spring back when lightly pressed.
  7. While muffins cool slightly, whisk powdered sugar, vanilla, and milk or cream until smooth.
  8. Drizzle glaze over warm muffins and serve.

  • Don’t overmix the batter—stir just until combined to keep muffins tender.
  • Use sweet-tart apples like Honeycrisp or Gala for best flavor.
