Ingredients

  • Cooking spray
  • 4 large egg yolks
  • 4 large egg whites, at room temperature
  • 3/4 cup granulated sugar
  • 2 tablespoons cold water
  • 8 tablespoons unsalted butter, melted and slightly cooled
  • 3/4 cup all-purpose flour
  • 1/8 teaspoon fine salt
  • 2 cups whole milk (or half-and-half or light cream)
  • 2 teaspoons vanilla extract or vanilla bean paste
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 325°F and position a rack in the center. Lightly coat an 8-inch square pan with cooking spray and line it with parchment paper, leaving overhangs on all sides.
  2. In a large bowl, whisk together the egg yolks, granulated sugar, and cold water until pale and fluffy, about 5–6 minutes.
  3. Slowly drizzle in the melted butter while mixing continuously. Scrape down the bowl to combine well.
  4. Add flour and salt, and mix until smooth. Pour in the milk and vanilla, mixing gently until thin and fully incorporated.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently stir the egg whites into the batter with about 10–12 strokes, leaving visible clumps for layering.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 50–55 minutes, until the top is golden and the center slightly jiggles.
  8. Cool completely at room temperature. Then cover and chill for at least 4 hours or up to 12 hours.
  9. Before serving, lift the cake out using the parchment and dust with powdered sugar. Slice and serve chilled or at cool room temperature.
