Ingredients

  • 1 cup cooked brown lentils, drained well
  • 1 cup vital wheat gluten
  • 1 small onion, finely minced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 tablespoon nutritional yeast
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground fennel
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground coriander
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1⁄2 teaspoon black pepper
  • 1⁄2 teaspoon red pepper flakes (optional)
  • 1⁄2 cup vegetable broth

Instructions

  1. In a large bowl, mash the cooked lentils until mostly smooth, leaving some texture.
  2. Add the onion, garlic, soy sauce, olive oil, and tomato paste. Mix well.
  3. Stir in nutritional yeast, smoked paprika, fennel, oregano, thyme, coriander, onion powder, garlic powder, salt, black pepper, and red pepper flakes.
  4. Add the vital wheat gluten and vegetable broth. Mix with a spoon, then knead by hand for 2–3 minutes until elastic.
  5. Divide the mixture into 6 equal parts and shape into sausage logs.
  6. Wrap each sausage tightly in foil, twisting the ends.
  7. Steam the wrapped sausages for 35 minutes.
  8. Allow to cool slightly before unwrapping. Use as desired or store for later.
