Ingredients

  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 1 medium onion, finely chopped (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups vegetable broth

Instructions

  1. Add chopped onion and garlic to a medium soup pot with a splash of vegetable broth.
  2. Cook over medium heat, stirring often, until the onion is soft and translucent, about 5 minutes.
  3. Add white beans and remaining vegetable broth to the pot.
  4. Bring to a gentle boil, then reduce heat and simmer uncovered for 15 minutes.
  5. Use an immersion blender to blend part or all of the soup to your desired texture.
  6. Add water or broth if needed to adjust consistency. Taste and adjust seasoning if desired.
  7. Serve hot.

Notes

  • Use a well-seasoned vegetable broth for best flavor.
  • Blend fully for a smooth soup or partially for a chunky texture.
  • Add cooked carrots or celery for extra body and flavor.
  • This recipe is naturally gluten-free and oil-free if desired.
  • Serve with crusty bread or salad for a full meal.
