Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin with avocado oil or olive oil.
  2. Chop vegetables into small, even pieces. Sauté red onion and broccoli in a small skillet over medium heat for 3–4 minutes. Add cherry tomatoes and cook 1 more minute. Remove from heat and let cool slightly.
  3. In a mixing bowl, whisk together eggs and milk until fully combined.
  4. Stir in shredded cheese, garlic powder, salt, pepper, and cooled vegetables.
  5. Pour egg mixture evenly into the muffin cups, filling each about ¾ full.
