Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, diced
  • 1 teaspoon sea salt, plus more to taste
  • ½ teaspoon freshly ground black pepper, plus more to taste
  • 1 medium carrot, diced
  • 1 small sweet potato, peeled and diced
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 4 garlic cloves, finely chopped
  • 2 teaspoons dried oregano
  • ¼ teaspoon red pepper flakes
  • 4 cups vegetable broth
  • 2 bay leaves
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, trimmed and chopped
  • 1 medium zucchini, diced
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 tablespoons white wine vinegar
  • 1½ cups kale, stems removed and leaves chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, salt, and pepper. Cook for 8 minutes, stirring occasionally, until the onion is soft.
  2. Add diced carrot and sweet potato. Stir and cook for 2 minutes.
  3. Stir in fire-roasted diced tomatoes, garlic, oregano, red pepper flakes, vegetable broth, and bay leaves. Bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes.
  4. Add cherry tomatoes, green beans, zucchini, and chickpeas. Cover and simmer for 10 to 15 minutes, until vegetables are tender.
  5. Stir in white wine vinegar and chopped kale. Cook for 5 minutes, until the kale wilts.
  6. Remove bay leaves, adjust seasoning with salt and pepper to taste, and serve hot.
