Ingredients

    • 2 cups all-purpose flour

    • 1/2 tsp baking soda
    • 1/2 cup granulated sugar
    • 1/4 cup packed brown sugar
    • 3/4 cup pumpkin purée (not pie filling)
    • 1 large egg
    • 1/3 cup milk
    • 1/4 cup unsalted butter, melted
    • 1 tsp vanilla extract
    • 2 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, 1/4 tsp cloves)
    • 1/2 tsp salt
    • Oil for frying (2–3 cups) or nonstick spray for baking

  • 2 tbsp milk
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Dubai Donuts: Mix warm milk, yeast, and sugar. Let sit 5–10 minutes until foamy. Add flour, butter, egg, and salt. Knead 8–10 minutes until smooth. Cover and rise 1 hour until doubled. Roll and cut dough into donuts, rest 20 minutes. Fry at 350°F until golden. Dip in glaze or brush with sugar syrup, sprinkle pistachios, and drizzle saffron milk. Add edible gold if desired.
  2. Pumpkin Spice Donuts: Whisk flour, baking powder, baking soda, pumpkin spice, and salt. In another bowl, beat pumpkin, egg, milk, butter, vanilla, sugar, and brown sugar until smooth. Fold in dry mix. Fry spoonfuls in 350°F oil until golden, or bake in greased donut pan at 350°F for 12–14 minutes. Dip in cinnamon glaze or dust with powdered sugar.
