Ingredients

8 lbs whole seedless watermelon, chilled (about 12 cups cubed)

1/4 cup extra virgin olive oil

Juice of 3 limes

1 1/2 tsp salt

3/4 tsp black pepper

1 cup fresh mint leaves, chopped

1 1/2 cups crumbled feta cheese (preferably sheep’s milk)

Instructions

  1. Cut rind from chilled watermelon and cube into 1-inch chunks. Drain in a colander.
  2. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  3. Place watermelon in a large salad bowl. Pour dressing over and add chopped mint. Toss gently to combine.
  4. Sprinkle in feta cheese and give one final gentle stir.
  5. Serve immediately or within 1 hour for best freshness.
