Ingredients
For the feta dip: 200 g feta cheese, 1/2 cup Greek yogurt, 1 garlic clove (minced), 2 tbsp olive oil, 1 tbsp fresh lemon juice, salt and pepper to taste
For the roasted red pepper salsa: 2 roasted red peppers (jarred or homemade), 1 tbsp olive oil, 1 garlic clove (minced), 1/2 tsp chili flakes, 1 tsp chopped tarragon (or parsley/coriander substitute)
Instructions
Make the feta dip: Add feta, Greek yogurt, garlic, olive oil, lemon juice, salt, and pepper to a food processor. Blend until smooth and creamy (or leave slightly chunky if desired).
Make the salsa: Finely chop roasted red peppers. Mix with olive oil, garlic, chili flakes, and tarragon. Chill in fridge until ready to serve.
Assemble: Spread whipped feta onto a shallow bowl or plate. Spoon roasted red pepper salsa on top, drizzle with infused oil, and finish with cracked pepper. Serve with warm pita, crackers, or crusty bread.
Notes
Use high-quality block feta in brine for the creamiest dip.
Jarred roasted peppers save time but homemade adds smoky flavor.
Swap herbs—parsley or coriander work well in place of tarragon.
Add honey or roasted garlic for a touch of sweetness.
For more spice, increase chili flakes or stir in harissa.
