Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can white beans (cannellini or navy), drained and rinsed
  • 1 medium onion, chopped
  • 2‑3 garlic cloves, minced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • Crumbled feta cheese (about ½ cup)
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (thyme or parsley), for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, salt & pepper. Roast on a baking sheet until tender and slightly caramelized, about 20‑25 minutes.
  2. Meanwhile, in a large pot, heat remaining olive oil over medium heat. Add chopped onion and sauté until soft, about 3‑4 minutes. Add garlic and cook for another minute until fragrant.
  3. Add the roasted sweet potatoes, white beans, and vegetable broth to the pot. Bring to a simmer and cook about 10 minutes to let flavors meld.
  4. Use an immersion blender to blend until smooth (or blend part of the soup and leave some texture, as you prefer).
  5. Stir in crumbled feta; let it melt slightly into the hot soup. Taste and adjust salt and pepper.
  6. Ladle into bowls and garnish with fresh herbs and extra feta if desired. Serve hot.

  • Swap white beans for chickpeas for a nuttier flavor.
