Ingredients

  • 1 pizza dough, about 1113 inches
  • For the toppings:
  • 1/3 cup white pizza sauce
  • 1/2 cup shiitake mushrooms, sliced
  • 1/2 medium onion, thinly sliced
  • 1 tablespoon olive oil
  • 1/4 cup fresh mozzarella cheese, torn or shredded
  • 1/4 cup ricotta cheese
  • 1/4 cup fresh arugula
  • Optional seasoning:
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 550°F (290°C) with a pizza stone or heavy baking sheet inside for at least 30 minutes.
  2. In a skillet over medium heat, heat olive oil. Add onions and cook for 15–20 minutes until caramelized. Set aside.
  3. In the same skillet, cook mushrooms for 6–7 minutes without stirring. Stir and cook 5 more minutes until golden. Season with salt and pepper.
  4. Let the pizza dough come to room temperature. On a lightly floured surface, stretch or roll into an 11–13 inch circle.
  5. Transfer dough to a pizza peel or parchment paper. Spread white sauce over the surface, leaving a border.
  6. Top with mozzarella, ricotta, caramelized onions, and mushrooms.
  7. Slide pizza onto hot stone or baking sheet. Bake for 8–10 minutes, rotating halfway through, until crust is golden and cheese melted.
  8. Remove from oven and top immediately with fresh arugula. Slice and serve warm.

  • Use cremini or button mushrooms if shiitake are unavailable.
