Ingredients

  • 3 medium zucchini, coarsely grated
  • 1 1/2 tbsp grated Parmesan cheese
  • 2 green onions, finely sliced
  • 1/3 cup dried breadcrumbs
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1 egg, lightly beaten
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Mint Yoghurt:
  • 1/2 cup plain yoghurt
  • 2 tbsp chopped fresh mint leaves

Instructions

  1. Squeeze excess moisture from grated zucchini.
  2. In a large bowl, combine zucchini, Parmesan, green onions, breadcrumbs, parsley, and beaten egg. Season with salt and pepper.
  3. Heat half the olive oil in a frying pan over medium heat. Scoop about 2 heaped tablespoons per fritter into the pan, flatten with a spatula, and cook 2–3 minutes per side until golden and cooked through.
  4. Transfer fritters to a paper towel–lined plate. Repeat with remaining oil and mixture to make about 8 fritters.
  5. In a small bowl, combine yoghurt with chopped mint.
  6. Serve fritters hot with mint yoghurt on the side.

Notes

  • Add garlic or garlic powder for extra flavor.
  • Swap Parmesan for feta for a tangier taste.
  • Use gluten-free breadcrumbs or almond meal for a gluten-free option.
  • Pan-fry in a mix of oil and butter for extra crispness.
  • Add cayenne or chili flakes for heat.
