Ingredients

  • 2 medium zucchini (about 400 g), grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour (60 g)
  • 1/4 cup grated parmesan cheese (25 g)
  • 2 large eggs
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon baking powder
  • 3 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchini and place in a bowl. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. Squeeze the zucchini thoroughly using hands or a clean towel to remove excess liquid.
  3. Transfer zucchini to a bowl and add flour, parmesan, eggs, garlic, parsley, black pepper, and baking powder. Mix well.
  4. Heat olive oil in a skillet over medium heat.
  5. Scoop about 2 tablespoons of mixture per fritter into the pan and flatten slightly.
  6. Cook for 3–4 minutes per side until golden and crispy.
  7. Remove and place on a paper towel-lined plate.
  8. Serve warm.
