Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 ribs celery, diced

  • 1 teaspoon black pepper

  • 3/4 cup beef broth
  • 2 pounds russet potatoes, thinly sliced
  • 2 carrots, peeled and cut into chunks
  • 1 can (10.5 ounces) cream of celery or mushroom soup

Instructions

  1. Brown ground beef in a skillet or Instant Pot using sauté mode.
  2. Add onion and celery and cook until softened, then drain excess grease.
  3. Season with salt, pepper, and garlic powder.
  4. Stir in beef broth and scrape any browned bits.
  5. Layer sliced potatoes over the beef mixture.
  6. Add carrots on top of potatoes.
  7. Spoon cream soup evenly over vegetables.
  8. For Instant Pot: seal and cook on high pressure for 2 minutes, then quick release.
  9. For slow cooker: cook on low for 3–5 hours until vegetables are tender.
  10. Stir gently and serve warm.
