Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons ice-cold water
  • 6 ounces smoked turkey strips, diced
  • 3 large eggs
  • 1 1/2 cups heavy cream
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded Gruyère cheese (optional)
  • 1 tablespoon chopped chives (optional)

Instructions

  1. In a large bowl, mix flour and salt for the crust.
  2. Cut cold butter into the flour until the mixture resembles coarse crumbs.
  3. Add ice-cold water gradually until the dough comes together.
  4. Shape dough into a disk, wrap, and refrigerate for 30 minutes.
  5. Preheat oven to 375°F (190°C).
  6. Roll out dough and press into a 9-inch tart or pie pan.
  7. Line crust with parchment paper and pie weights, then blind bake for 15 minutes.
  8. Remove weights and bake another 10 minutes until lightly golden.
  9. Cook smoked turkey strips in a skillet until lightly crisp.
  10. In a bowl, whisk eggs, heavy cream, nutmeg, salt, and pepper until smooth.
  11. Spread turkey evenly over the crust and sprinkle cheese if using.
  12. Pour custard mixture carefully into the crust.
  13. Reduce oven temperature to 350°F (175°C) and bake for 35–40 minutes until center is just set.
  14. Cool for 10 minutes before slicing and serving.
