Instructions

  1. Preheat oven to 375°F (190°C) and line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat eggs and sugar until thick and pale, then mix in oil and vanilla.
  3. Whisk flour, baking powder, cinnamon, nutmeg, ginger, and salt in a separate bowl.
  4. Fold dry ingredients into wet mixture, then fold in grated carrots.
  5. Spread batter evenly into pan and bake for 10–12 minutes until lightly springy.
  6. Turn cake onto a powdered sugar-dusted towel and roll while warm. Cool completely.
  7. Beat cream cheese and butter until smooth, then add powdered sugar, vanilla, and cream.
  8. Unroll cooled cake, spread filling evenly, then re-roll without towel.
  9. Wrap and chill for at least 1 hour before slicing and serving.
