Ingredients

  • 4 ripe pears, halved and cored
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter, cut into small pieces
  • 2 tablespoons chopped almonds or walnuts (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and lightly grease a baking dish.
  2. Halve and core the pears, then arrange them cut side up in the dish.
  3. In a bowl, mix honey, lemon juice, vanilla extract, cinnamon, and nutmeg.
  4. Spoon the honey mixture evenly over the pears.
  5. Scatter berries around and over the pears.
  6. Dot with small pieces of butter.
  7. Bake for 25–30 minutes until pears are tender and berries have released juices.
  8. Baste halfway through with juices from the dish.
  9. Remove, cool slightly, then garnish with nuts and mint if desired before serving.
