Ingredients

  • 2 cups crushed vanilla wafers
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, mashed
  • 1 cup whipped cream
  • 1 banana, sliced
  • 1/2 cup crushed vanilla wafers (for topping)

Instructions

  1. Preheat oven to 160°C (325°F) and grease a 9-inch springform pan.
  2. Mix crushed wafers, melted butter, and sugar, then press into pan to form crust. Bake for 10 minutes and cool.
  3. Beat cream cheese until smooth, add sugar, then mix in eggs one at a time.
  4. Add sour cream, heavy cream, and vanilla, mixing until smooth.
  5. Fold in mashed bananas and pour batter over crust.
  6. Place pan in water bath and bake for 55–65 minutes until center is slightly jiggly.
  7. Turn off oven, let cheesecake cool inside for 1 hour.
  8. Refrigerate for at least 4 hours or overnight.
  9. Top with whipped cream, banana slices, and crushed wafers before serving.
