Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 8 oz (225 g) mushrooms, sliced
  • 1 bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2–3 tablespoons freshly cracked black pepper
  • 1 tablespoon oyster sauce
  • 2 green onions, chopped
  • Cooked rice or noodles (for serving)

Instructions

  1. Mix chicken with soy sauce and cornstarch; marinate for 15–20 minutes.
  2. Heat oil in a skillet or wok over medium-high heat.
  3. Cook chicken until golden and fully cooked, then remove and set aside.
  4. In the same pan, stir-fry mushrooms, bell pepper, onion, garlic, and ginger for 4–5 minutes.
  5. Return chicken to the pan.
  6. Add black pepper and oyster sauce, stirring to combine.
  7. Cook for 2–3 more minutes until everything is coated in sauce.
  8. Garnish with green onions and serve hot with rice or noodles.
