Ingredients

  • 8–10 large ripe tomatoes, peeled
  • 3 ounces tomato paste
  • 1/2 cup fresh lime juice
  • 1–2 tablespoons salt, to taste
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon black pepper
  • 1 green bell pepper, chopped
  • 1 large red onion, chopped
  • 1/2 large yellow onion, chopped
  • 2–3 jalapeño peppers, seeds removed
  • 1/2 bunch fresh cilantro, stems removed

Instructions

  1. Boil tomatoes briefly, transfer to ice bath, peel skins, and blend until smooth or chunky as desired.
  2. Transfer blended tomatoes to a large pot and stir in tomato paste, lime juice, salt, garlic powder, and black pepper.
  3. Blend bell pepper, onions, and jalapeños until finely chopped and add to pot.
  4. Simmer salsa over low heat for 3–4 hours, stirring occasionally until reduced and thickened.
  5. Blend reserved cilantro and a portion of red onion, then stir into cooled salsa for fresh flavor.
  6. Serve or store in airtight containers for later use.

Notes

  • Adjust jalapeños to control spice level.
  • Simmering deepens flavor and thickens texture.
  • Canned tomatoes can be used for convenience.
  • Blend less for a chunkier salsa.
  • Best flavor develops after cooling.
