Ingredients

  • 1½ cups (190 g) all-purpose flour
  • ⅓ cup (40 g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon fine salt
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (55 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup (120 g) blueberry jam
  • Purple food coloring, optional
  • ¼ cup (50 g) granulated sugar, for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar for 2 to 3 minutes, until light and fluffy.
  4. Add the egg and vanilla extract, then beat until smooth.
  5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  6. If using purple food coloring, add a few drops and mix until evenly colored.
  7. Scoop about 1 tablespoon of dough, flatten it slightly, and place about ½ teaspoon blueberry jam in the center.
  8. Wrap the dough around the jam and roll into a sealed ball.
  9. Place the cookie balls on the prepared baking sheet, leaving space between each cookie, and sprinkle lightly with granulated sugar.
  10. Bake for 10 to 12 minutes, until the edges are set and the centers are still soft.
  11. Cool on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use thick blueberry jam to help prevent leaking during baking.
  • Chilling the dough is optional but helps the cookies hold their shape.
