Ingredients

  • 1 pound lean ground beef (85% or 90% lean)
  • 1/2 cup plain breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce

  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil or butter, divided
  • 1 medium onion, finely chopped
  • 8 ounces mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 tablespoon ketchup
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley (optional)

Instructions

  1. Mix ground beef, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper until just combined.
  2. Shape mixture into 4 oval patties.
  3. Brown patties in a skillet with 1 tablespoon oil, then set aside.
  4. Sauté onion and mushrooms in remaining oil until softened.
  5. Stir in flour and cook for 1 minute.
  6. Slowly whisk in beef broth, then add ketchup and thyme.
  7. Simmer until slightly thickened.
  8. Return patties to skillet and simmer covered for 15–20 minutes until cooked through.
