115 g unsalted butter
100 g ground hazelnuts
150 g powdered sugar, sifted
50 g all-purpose flour
4 large egg whites, room temperature
1 teaspoon vanilla extract
1/4 teaspoon fine salt
300 g fresh or frozen cherries, pitted
60 g granulated sugar
2 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon cornstarch mixed with 1 tablespoon cold water

Instructions
Preheat the oven to 190°C (375°F) and grease a financier or mini mold pan.
Melt the butter in a saucepan over medium heat, cooking until it turns golden brown and develops a nutty aroma, about 4–5 minutes. Transfer to a bowl and cool.
In a bowl, whisk together ground hazelnuts, powdered sugar, flour, and salt.
Add egg whites and vanilla extract, stirring until a smooth batter forms.
Gradually mix in the cooled brown butter until fully incorporated.
Divide the batter into molds, filling each about three-quarters full.
Bake for 12–15 minutes until golden at the edges and set in the center.
Meanwhile, combine cherries, sugar, and lemon juice in a saucepan. Cook for 8–10 minutes until softened.
Stir in the cornstarch mixture and cook for 1–2 minutes until thick and glossy. Add lemon zest and remove from heat.
Remove financiers from molds while warm and place on a serving plate.
Spoon warm cherry compote over each and garnish with hazelnuts, fresh cherries, and powdered sugar.
Notes
Substitute ground almonds for a classic financier variation.
Use raspberries or blueberries instead of cherries for a different flavor.
Add orange zest to the batter for a citrus twist.
Store financiers in an airtight container for up to 2 days or refrigerate for up to 5 days.
Reheat in a low oven at 150°C (300°F) for about 5 minutes.
