  • 3 green onions, sliced (whites and greens separated)
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 cup cottage cheese, blended until smooth
  • 1/4 cup soy sauce or tamari
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha or garlic chili sauce (optional)
  • 1 tsp toasted sesame oil
  • 2 large eggs, beaten

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Heat olive oil and sesame oil in a skillet. Sauté onion and green onion whites for 3–4 minutes.
  3. Add garlic and ginger, cook for 1 minute until fragrant.
  4. Add ground turkey or chicken and cook until browned; drain excess liquid.
  5. Stir in carrots and cabbage, cooking 5–7 minutes until slightly softened.
  6. In a bowl, mix soy sauce, rice vinegar, sriracha, cottage cheese, eggs, and toasted sesame oil.
  7. Remove skillet from heat, let cool slightly, then mix in sauce mixture.
  8. Transfer to baking dish and spread evenly.
  9. Bake for 25–30 minutes until set and lightly golden.
  10. Let rest 5–10 minutes, garnish with green onions, and serve.

Notes

  • Do not overcook cabbage before baking to avoid excess moisture.
  • Blend cottage cheese for a smoother texture.
  • Adjust spice level with sriracha or chili flakes.
  • Great for meal prep as flavors improve over time.
  • Use tamari for a gluten-free option.
