Ingredients

  • 1 cup grated fresh carrots
  • 1 cup pitted dates
  • 1/2 cup walnuts, chopped
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 teaspoon vanilla extract
  • 12 tablespoons shredded coconut (optional)
  • Pinch of salt

Instructions

  1. Finely grate carrots and soften dates if needed by soaking in warm water.
  2. Add dates, walnuts, oats, cinnamon, nutmeg, and salt to a food processor and blend until crumbly.
  3. Add grated carrots and vanilla extract, then blend until sticky and combined.
  4. Scoop mixture and roll into small balls.
  5. Optionally coat in shredded coconut or extra oats.
  6. Refrigerate for 20–30 minutes to firm up before serving.
