Ingredients

  • 1 pound lean ground beef
  • 4 tablespoons butter, divided
  • 3/4 cup onion, finely chopped
  • 3/4 cup carrots, shredded
  • 3/4 cup celery, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley flakes
  • 4 cups potatoes, peeled and cubed
  • 3 cups chicken broth
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 16 ounces Velveeta cheese, cubed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sour cream
  • Optional toppings: sliced green onions, crispy onion rings, shredded cheddar cheese, chopped pickles

Instructions

  1. Cook ground beef in a large pot until browned, then drain and set aside.
  2. Melt 1 tablespoon butter and sauté onion, carrots, celery, basil, and parsley until softened.
  3. Return beef to pot and add potatoes and chicken broth. Simmer until potatoes are tender.
  4. Melt remaining butter in a pan, whisk in flour, and cook to form a roux.
  5. Stir roux into soup and simmer until slightly thickened.
  6. Add Velveeta, milk, salt, and pepper, stirring until cheese is fully melted.
  7. Remove from heat and stir in sour cream.
  8. Serve hot with desired toppings.
