Ingredients

  • 1 pound fresh broccoli head, finely chopped
  • 6 ounces mozzarella cheese, freshly shredded
  • 2 large eggs, beaten
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash the broccoli thoroughly and remove the thick stem. Finely chop the florets into very small pieces, about 1/4 inch or smaller.
  3. Place the chopped broccoli into a large mixing bowl and let it rest for about 20 minutes if desired.
  4. Add the shredded mozzarella cheese, beaten eggs, cornstarch, salt, granulated garlic, and black pepper. Mix thoroughly until fully combined.
  5. Using a small cookie scoop or spoon, portion the mixture into about 24 small balls. Roll and gently press each one together so it holds its shape.
  6. Arrange the broccoli bites on the prepared baking sheet, leaving space between each bite.
  7. Bake for 18 to 20 minutes or until golden brown around the edges.
  8. Remove from the oven and allow to cool for a few minutes before serving.
