Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 8 small taco shells or tortillas
  • 1 tablespoon olive oil
  • Optional: shredded lettuce
  • Optional: diced tomatoes
  • Optional: chopped fresh cilantro
  • Optional: sour cream
  • Optional: shredded mozzarella or extra cheddar cheese

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart (6–8 minutes).
  3. Drain excess fat and return beef to skillet.
  4. Stir in taco seasoning until evenly coated.
  5. Add Rotel tomatoes with liquid and simmer for 3–5 minutes.
  6. Reduce heat and stir in cream cheese until fully melted.
  7. Add shredded cheddar cheese and stir until melted and creamy.
  8. Warm taco shells or tortillas.
  9. Fill shells with beef mixture and add desired toppings.
  10. Serve immediately while warm.
