Ingredients

  • 2 medium zucchinis, sliced lengthwise
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 190°C (375°F) and lightly grease a baking dish.
  2. Slice zucchinis lengthwise into thin strips.
  3. Brush slices lightly with olive oil and grill or bake briefly until just tender.
  4. In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
  5. Spread a small amount of filling on each zucchini slice.
  6. Roll up each slice and place seam-side down in the baking dish.
  7. Pour marinara sauce over the roll-ups.
  8. Sprinkle extra mozzarella or Parmesan on top if desired.
  9. Bake for 20–25 minutes until bubbly and lightly golden.
  10. Let cool slightly before serving.
