Ingredients

  • 6 small flour tortillas
  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 cups vegetable oil
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Mix granulated sugar and cinnamon in a shallow bowl and set aside.
  2. Heat vegetable oil in a deep pan to 175°C (350°F).
  3. Fold each tortilla in half using tongs and fry until golden and crispy, about 1–2 minutes per side.
  4. Remove from oil and coat immediately in cinnamon-sugar, then shape into taco shells and cool.
  5. Beat cream cheese until smooth, then mix in powdered sugar and vanilla extract.
  6. Whip heavy cream to stiff peaks and gently fold into the cream cheese mixture.
  7. Fill cooled taco shells with the cheesecake mixture using a spoon or piping bag.
  8. Top each taco with cherry pie filling.
  9. Serve immediately or refrigerate until ready to serve.

Notes

  • Bake tortillas at 190°C for 8–10 minutes as a lighter alternative to frying.
  • Use different pie fillings like strawberry or blueberry for variation.
  • Keep shells and filling separate until serving to maintain crispness.
  • Store filling in the refrigerator for up to 2 days.
  • Do not freeze assembled tacos as texture may change.
  • Add chocolate drizzle or nuts for extra flavor.
