Ingredients

  • 1 cup granulated sugar
  • 1 cup apple cider vinegar
  • 1/2 cup freshly squeezed lime juice

  • Sparkling water or still water (for serving)

Instructions

  1. Mash cherries in a bowl to release juices.
  2. Add sugar and stir until cherries are coated.
  3. Cover and refrigerate for at least 12 hours or overnight.
  4. Strain mixture through a sieve, pressing to extract liquid.
  5. Discard solids and stir in vinegar, lime juice, and zest.
  6. Transfer to a jar and refrigerate for at least 24 hours.
  7. To serve, add 2–3 tablespoons shrub to a glass with ice.
  8. Top with sparkling or still water and stir gently.
