Ingredients

  • 400 g chickpeas, drained and rinsed (about 1 3/4 cups)
  • 80 g smooth peanut butter or other nut butter (about 1/3 cup)
  • 80 g liquid sweetener such as maple syrup, honey, or agave (about 1/4 cup)
  • 45 g cocoa powder (about 1/2 cup)
  • 100 g dark chocolate, melted (about 3.5 oz)
  • Optional: coarse sea salt
  • Optional: crushed nuts
  • Optional: unsweetened shredded coconut

Instructions

  1. Drain and rinse the chickpeas thoroughly, then pat them dry with paper towels.
  2. Add the chickpeas, peanut butter, liquid sweetener, and cocoa powder to a food processor or blender.
  3. Blend until the mixture becomes completely smooth and creamy, scraping down the sides as needed.
  4. If the mixture feels too soft, refrigerate it for 5 to 10 minutes.
  5. Scoop portions of the mixture and roll them into balls using your hands.
  6. Place the dark chocolate in a heatproof bowl and melt it in the microwave in 30-second intervals, stirring between each interval until smooth.
  7. Dip each truffle into the melted chocolate using a fork, allowing excess chocolate to drip off.
  8. Place the coated truffles on parchment paper.
  9. Sprinkle with optional toppings such as sea salt, crushed nuts, or shredded coconut before the chocolate sets.
