Ingredients

  • 1 cup vegan salted butter, room temperature
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free 1:1 baking flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon fine sea salt
  • 3/4 cup dairy-free chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the vegan butter and powdered sugar together until light and fluffy, about 2 to 3 minutes.
  3. Add the vanilla extract and mix until fully combined.
  4. In a separate bowl, whisk together the gluten-free flour, cornstarch, and sea salt.
  5. Gradually add the dry ingredients into the butter mixture and mix on low speed until a soft dough forms.
  6. Fold in the dairy-free chocolate chips evenly throughout the dough.
  7. Scoop tablespoon-sized portions of dough and gently roll them into balls.
  8. Place the dough balls onto the prepared baking sheets, leaving space between each cookie.
  9. Slightly flatten each cookie with the bottom of a glass or your palm.
  10. Bake for 12 to 15 minutes or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
  12. Cool completely before serving for the best shortbread texture.

Notes

  • Stick-style vegan butter creates the best buttery texture.
  • Do not overmeasure the flour to avoid crumbly cookies.
  • Dark dairy-free chocolate chunks can be used for a richer flavor.
  • Add chopped walnuts, pecans, cranberries, or shredded coconut for variations.
  • A pinch of cinnamon or espresso powder enhances the flavor profile.
  • Store cookies in an airtight container to keep them crisp.
  • The dough can be refrigerated for up to 2 days before baking.
