Ingredients

  • 1 cup full-fat cottage cheese
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine salt
  • 1/2 cup finely chopped strawberries or blueberries
  • 1/3 cup unsweetened shredded coconut
  • 1 cup semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line a baking sheet or tray with parchment paper.
  2. In a medium bowl, stir together the cottage cheese, honey, vanilla extract, salt, chopped fruit, and shredded coconut until evenly combined.
  3. Scoop the mixture into small mounds using about 2 tablespoons per cluster and place them onto the prepared baking sheet.
  4. Freeze the clusters for 1 1/2 to 2 hours, or until firm.
  5. Add the chocolate chips and coconut oil to a microwave-safe bowl.
  6. Microwave in 20-second intervals, stirring after each interval, until smooth and fully melted.
  7. Dip each frozen cluster into the melted chocolate and place it back onto the parchment paper.
  8. Chill the coated clusters in the refrigerator for 10 to 15 minutes until the chocolate shell is set.
  9. Serve chilled or frozen.
