Ingredients

  • For the chocolate base:
  • 1 1/2 cups crushed chocolate biscuits
  • 1/3 cup unsalted butter, melted
  • 2 tablespoons cocoa powder
  • 1 tablespoon sugar
  • For the cream filling:
  • 8 oz cream cheese, softened
  • 1 cup heavy cream, cold
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup melted white chocolate, cooled slightly
  • For the chocolate topping:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter

Instructions

  1. Line an 8-inch square baking pan with parchment paper, leaving extra paper on the sides for easy lifting.
  2. In a bowl, mix the crushed chocolate biscuits, melted butter, cocoa powder, and sugar until evenly coated.
  3. Press the crumb mixture firmly into the bottom of the prepared pan and chill for 15 minutes.
  4. In a large bowl, beat the softened cream cheese until smooth.
  5. Add the powdered sugar and vanilla extract, then mix until creamy.
  6. Pour in the melted white chocolate and mix again until smooth.
  7. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  9. Spread the cream filling evenly over the chilled chocolate base.
  10. Heat the heavy cream for the topping until hot but not boiling.
  11. Pour the hot cream over the chocolate chips and butter. Let sit for 2 minutes, then stir until smooth and glossy.
  12. Pour the chocolate topping over the cream layer and spread evenly.
  13. Refrigerate for at least 4 hours, or until fully firm.
  14. Lift the dessert from the pan using the parchment paper, slice into bars, and serve chilled.

Notes

  • For cleaner slices, use a sharp knife and wipe it between cuts.
  • Dark chocolate chips create a richer topping flavor.
  • Chopped nuts can be added to the base for extra crunch.
  • Orange zest adds a fresh citrus flavor to the cream filling.
  • Caramel sauce can be layered under the chocolate topping for extra sweetness.
  • Mascarpone cheese works well as a substitute for cream cheese.
  • Store refrigerated for up to 5 days.
  • Freeze bars for up to 2 months and thaw in the refrigerator before serving.
