Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 11×7-inch baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg yolks and vanilla extract until smooth.
  4. In a separate bowl, whisk together the flour, cocoa powder, and baking powder.
  5. Gradually mix the dry ingredients into the butter mixture until a soft chocolate dough forms.
  6. Press half of the dough evenly into the prepared baking pan.
  7. Spread the raspberry fruit spread evenly over the dough layer.
  8. Crumble the remaining dough over the raspberry layer.
  9. Bake for 35 to 40 minutes, or until the top is set.
  10. Allow the bars to cool completely on a wire rack.
  11. Remove the bars from the pan and cut into squares.
  12. Place the chopped chocolate in a heatproof bowl.
  13. Heat the heavy cream until it just begins to boil, then pour it over the chocolate.
  14. Whisk until smooth and glossy.
  15. Drizzle the chocolate mixture over the bars and top each piece with fresh raspberries before serving.
