Ingredients

  • 1 large head romaine lettuce, chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 1 French baguette, cut into 1-inch cubes
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 cup extra virgin olive oil
  • 1 garlic clove, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Extra Parmesan cheese for serving (optional)
  • Freshly cracked black pepper for serving (optional)
  • Grilled chicken or shrimp for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the baguette cubes on a baking sheet. Drizzle with olive oil, add minced garlic and salt, then toss to coat evenly.
  3. Bake the croutons for 10 to 12 minutes, turning halfway through, until golden brown and crispy. Let cool.
  4. In a medium bowl, whisk together the olive oil, garlic, Dijon mustard, Worcestershire sauce, lemon juice, red wine vinegar, salt, and black pepper until smooth.
  5. Wash and dry the romaine lettuce thoroughly, then chop into bite-sized pieces.
  6. Place the lettuce in a large salad bowl and pour the dressing over the top.
  7. Toss gently until the lettuce is evenly coated.
  8. Add the homemade croutons and grated Parmesan cheese.
  9. Toss lightly again to combine.
  10. Serve immediately with extra Parmesan cheese and freshly cracked black pepper if desired.

Notes

  • Romaine lettuce is best for maintaining crisp texture.
  • Homemade croutons provide the best flavor and crunch.
  • For a creamier dressing, whisk in a tablespoon of mayonnaise or Greek yogurt.
  • Add grilled chicken, shrimp, or boiled eggs for extra protein.
  • Vegetarian Worcestershire sauce can be used for a vegetarian version.
  • Store dressing, lettuce, and croutons separately for freshness.
  • Croutons can be reheated briefly in the oven if they soften.
  • Avoid freezing the salad because lettuce becomes watery after thawing.
