Ingredients

  • 1 cup short-grain white rice
  • 2 cups water
  • 4 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon unsalted butter
  • 1/2 cup raisins (optional)
  • 1/2 cup heavy cream

Instructions

  1. Rinse rice under cold water until clear.
  2. In a saucepan, combine rice and water; bring to a boil, then simmer covered for 10–12 minutes until water is mostly absorbed.
  3. Add milk, sugar, and salt; stir well.
  4. Cook over medium-low heat for 25–30 minutes, stirring frequently until thick and tender.
  5. Stir in butter, vanilla, cinnamon, and nutmeg.
  6. Add raisins if using and cook for another 5 minutes.
  7. Pour in heavy cream and mix until smooth.
  8. Remove from heat and let cool slightly before serving.

  • Rice pudding thickens as it cools; add milk when reheating.
