Ingredients

  • 2 cups green peas (fresh or frozen, thawed)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cheddar cheese, cubed
  • 1/3 cup red onion, finely chopped
  • 1/2 cup celery, diced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. If using frozen peas, thaw and drain them well. If using fresh peas, blanch for 2–3 minutes, then cool in ice water and drain.
  2. In a large bowl, mix mayonnaise and sour cream until smooth.
  3. Add lemon juice, sugar, salt, and black pepper, and stir to combine.
  4. Add peas, cheddar cheese, red onion, celery, and parsley.
  5. Gently fold everything together until evenly coated.
  6. Taste and adjust seasoning if needed.
  7. Cover and refrigerate for at least 1 hour before serving.
  8. Stir gently before serving and garnish with extra parsley if desired.
