Ingredients

  • 5 g powdered gelatin
  • 25 ml cold water
  • For the coconut mousse:
  • 200 g coconut milk
  • 100 g white chocolate, chopped
  • 150 g whipped cream
  • 5 g powdered gelatin
  • 25 ml cold water
  • 1 teaspoon vanilla extract
  • For the glaze:
  • 150 g blueberry purée
  • 50 g granulated sugar
  • 3 g powdered gelatin
  • 15 ml cold water
  • For decoration:
  • Fresh blueberries
  • Extra desiccated coconut (optional)

Instructions

  1. Mix biscuit crumbs, melted butter, and desiccated coconut. Press firmly into the base of a mold and chill.
  2. Bloom gelatin for blueberry mousse in cold water for 5 minutes.
  3. Warm blueberry purée with sugar, remove from heat, and stir in gelatin. Cool slightly.
  4. Fold in whipped cream gently, pour over base, and freeze until firm.
  5. Bloom gelatin for coconut mousse in cold water.
  6. Warm coconut milk and pour over white chocolate. Stir until smooth.
  7. Add gelatin and vanilla extract, cool slightly, then fold in whipped cream.
  8. Pour over frozen blueberry layer and freeze until solid.
  9. Bloom gelatin for glaze in cold water.
  10. Warm blueberry purée with sugar, stir in gelatin, and cool until fluid.
  11. Pour glaze over frozen entremet and decorate with fresh blueberries and coconut.
  12. Refrigerate until ready to serve and slice.
