Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups sweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Optional: 1/4 cup toasted coconut flakes
  • Optional: 2 tablespoons chocolate drizzle
  • Optional: 1/4 cup chopped pecans or almonds

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a mixing bowl, combine the melted butter, graham cracker crumbs, and brown sugar until evenly mixed.
  3. Press the crumb mixture firmly into the bottom of the prepared pan to form the crust.
  4. Bake the crust for 8 minutes until lightly golden, then remove from the oven.
  5. In another bowl, mix together the sweetened condensed milk, shredded coconut, and vanilla extract.
  6. Spread the coconut mixture evenly over the warm crust.
  7. Return the pan to the oven and bake for 20 to 25 minutes until the coconut layer is lightly golden around the edges.
  8. Remove the bars from the oven and let them cool slightly.
  9. Place the chocolate chips in a heatproof bowl.
  10. Heat the heavy cream in a saucepan until hot but not boiling, then pour it over the chocolate chips.
  11. Let the mixture sit for 2 minutes, then stir until smooth and glossy.
  12. Spread the melted chocolate evenly over the coconut layer.
  13. Refrigerate the bars for at least 2 hours until the chocolate is fully set.
  14. Slice into bars and garnish with toasted coconut, chocolate drizzle, or chopped nuts if desired.

Notes

  • For a richer flavor, substitute dark chocolate chips for semi-sweet chocolate chips.
  • Use parchment paper for easier removal and cleaner slicing.
  • Chill thoroughly before slicing for neat bars.
  • Sweetened coconut provides the best chewy texture and sweetness.
  • These bars are excellent for making ahead and storing chilled.
  • A sprinkle of flaky sea salt on top adds a delicious sweet-and-salty contrast.
