Ingredients

  • 2 large English cucumbers
  • 1 1/2 cups plain Greek yogurt
  • 3 tablespoons fresh lemon juice
  • 1 medium shallot, peeled and chopped
  • 1 garlic clove
  • 1/3 cup fresh dill, loosely packed
  • 1/4 cup fresh curly parsley leaves, loosely packed
  • 2 tablespoons extra virgin olive oil, plus extra for drizzling
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon white pepper
  • Optional: 2 tablespoons pine nuts
  • Optional: 2 tablespoons diced cucumber
  • Optional: 2 tablespoons sliced green onions

Instructions

  1. Wash the cucumbers thoroughly and slice them in half lengthwise.
  2. Use a spoon to scoop out the seeds for a smoother soup texture.
  3. Cut the cucumbers into chunks and place them into a blender.
  4. Add the Greek yogurt, lemon juice, chopped shallot, garlic clove, dill, parsley, and olive oil.
  5. Blend until completely smooth and creamy, about 1 to 2 minutes.
  6. Taste and season with sea salt and white pepper. Blend briefly again to combine.
  7. Pour the soup into a bowl or airtight container and refrigerate for at least 8 hours or overnight for the best flavor.
  8. Before serving, stir the soup well and ladle into bowls.
  9. Garnish with diced cucumber, sliced green onions, pine nuts, and a drizzle of olive oil if desired.
  10. Serve chilled.

Notes

  • English cucumbers work best because they have fewer seeds and thinner skin.
  • Fresh herbs provide the brightest flavor, but dried herbs can be substituted in smaller amounts.
  • Add cold water if you prefer a thinner soup consistency.
  • Fresh mint can be added for extra freshness.
  • This soup tastes even better after chilling overnight.
  • Do not freeze, as the yogurt may separate after thawing.
