Ingredients

  • 2 1/2 cups self-rising flour
  • 1 cup cottage cheese
  • 1 cup milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 1/2 teaspoons ground cinnamon
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-count donut pan with cooking spray or butter.
  2. In a large mixing bowl, whisk together the self-rising flour and granulated sugar.
  3. Add the cottage cheese, milk, and vanilla extract. Stir until a thick but smooth batter forms.
  4. If the batter is too thick, add milk one tablespoon at a time. If too wet, add a little extra flour.
  5. Spoon or pipe the batter evenly into the prepared donut pan, filling each cavity about three-quarters full.
  6. Bake for 15 to 17 minutes, or until the donuts are lightly golden and spring back when touched.
  7. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack.
  8. In a small bowl, mix together the cinnamon and sugar for the coating.
  9. Brush each warm donut lightly with melted butter.
  10. Dip the donuts into the cinnamon-sugar mixture until fully coated.
  11. Serve warm or cool completely before storing.

Notes

  • Cottage cheese blends smoothly into the batter and keeps the donuts moist and fluffy.
  • Do not overmix the batter to maintain a soft texture.
  • Mini chocolate chips or blueberries can be added for extra flavor.
  • These donuts are best enjoyed warm but store well for several days.
  • Use silicone donut pans for easier removal if available.
