Ingredients

  • 250g cooked chicken, shredded
  • 240ml double cream
  • 240ml chicken stock
  • 150g frozen peas and carrots
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 15ml olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 480g mashed potatoes
  • 100g grated cheddar cheese (optional)

Instructions

  1. Preheat the oven to 190°C (375°F) and lightly grease a medium-sized baking dish.
  2. Heat the olive oil in a large frying pan over medium heat.
  3. Add the chopped onion and cook for 4 to 5 minutes until softened and translucent.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the shredded chicken along with the peas and carrots. Stir well to combine.
  6. Pour in the chicken stock and double cream. Simmer gently for about 5 minutes until slightly thickened.
  7. Season the mixture with salt and black pepper.
  8. Transfer the creamy chicken filling into the prepared baking dish.
  9. Spoon the mashed potatoes evenly over the filling and rough up the surface with a fork.
  10. Sprinkle grated cheddar cheese over the top if using.
  11. Bake for 25 to 30 minutes until the topping is golden brown and bubbling.
  12. Let the pie rest for 5 minutes before serving.
