Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 can (400 ml) full-fat coconut milk
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Wash and dry fresh berries or slightly thaw frozen berries.
  2. Blend berries until smooth.
  3. Add coconut milk, honey or maple syrup, vanilla extract, lemon juice, and salt.
  4. Blend again until smooth and creamy.
  5. Taste and adjust sweetness if needed.
  6. Pour mixture into a shallow freezer-safe container.
  7. Freeze for 2 hours, then stir to break ice crystals.
  8. Repeat stirring every hour 1–2 more times.
  9. Freeze for a total of 4–5 hours until scoopable.
  10. Let sit a few minutes at room temperature before serving.

  • Use full-fat coconut milk for best creaminess.
  • Stirring during freezing improves texture.
  • Can substitute berries with mango, pineapple, or peaches.
  • Add shredded coconut or chocolate chips for variation.
