Ingredients

  • 8 ounces pasta (spaghetti or fettuccine)
  • 2 medium summer squash, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil and butter in a skillet over medium heat. Add sliced squash and cook for 6–8 minutes until tender and lightly browned.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Reduce heat to low and pour in heavy cream. Simmer for 2–3 minutes until slightly thickened.
  5. Add cooked pasta to the skillet and toss to coat. Use reserved pasta water as needed to adjust consistency.
  6. Stir in parmesan cheese, salt, black pepper, and red pepper flakes if using. Mix until smooth and glossy.
  7. Remove from heat, sprinkle with parsley, and serve immediately.

  • Reserve pasta water to control sauce consistency.
  • Do not burn garlic to avoid bitterness.
  • Use zucchini as a substitute for summer squash.
