Ingredients

  • 500 g mixed mushrooms (cremini, button, or shiitake), sliced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable or chicken broth
  • 2 tablespoons butter or olive oil
  • 2 tablespoons all-purpose flour
  • 1/2 cup heavy cream
  • 1 teaspoon thyme (fresh or dried)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat butter or oil in a large pot over medium heat.
  2. Sauté onion and garlic until soft and fragrant.
  3. Add mushrooms and thyme, cooking until mushrooms release moisture and brown.
  4. Stir in flour and cook for 1–2 minutes.
  5. Gradually add broth while stirring to prevent lumps.
  6. Bring to a gentle boil, then reduce heat and simmer for 15 minutes.
  7. Blend part of the soup if a smoother texture is desired.
  8. Stir in heavy cream and season with salt and pepper.
  9. Simmer for 5 more minutes until creamy and hot.
  10. Serve garnished with fresh parsley.

Notes

  • Brown mushrooms well for deeper flavor.
  • Blend only part of the soup for a mix of creamy and chunky texture.
  • Do not boil after adding cream to prevent curdling.
  • Use vegetable broth for a vegetarian version.
  • Soup thickens as it sits, so adjust liquid if reheating.
